Preparing tea is no brainer, most people think, but how many people can really prepare a good cup of tea?  You just need to pour some hot water over dry leaves or tea bag and drink when the tea looks like a good color, right?
It might be acceptable for most people, but really that's not how you can really get the most out of it, especially GREEN TEA.

Green tea is very sensitive compared to other types of tea.
Normally, for black tea and oolong tea you pour boiling hot water because you want the aroma to stand out, but if you did this to green tea, you would probably not enjoy it because it gets really bitter.

But WHY? .

When you pour boiling hot water, bitterness in green tea is more expressive than sweetness and other subtle flavors, thus it tastes really bitter.

So how do you prepare green tea?

First, you boil water, then cool it by pouring it into a cup.
You keep the water in the cup until the water reaches desired temperature.
And what temperture to use?
generally around 70C (160F).
If your tea is good quality, cool a little more.
If your tea is cheap low quality tea, then use hotter water.

Anyway, by cooling the water you extract less bitter taste while sweetness remains relatively high so it tastes sweet compared to higher temperature brew
